• Ingredients:-
    - Vegetables - carrots, beans, green plantain, drumstick, chow-chow, peas (2 cups altogether)
    - Coconut - 1 cup
    - Jeera - 1tsp
    - Green chillies - 6-7
    - Cashew nuts - 2 tbls
    - Turmeric Powder ½ tsp
    - Dhania powder ¼ tsp
    - Yoghurt ½ cup
    - Salt to taste
    - Curry leaves
    - Cocnut oil 2 tsp
    - Pepper ½ tspy

  • Preparation:-
    1. Cook all the vegetables 1 cup of water with little salt, turmeric and Dhania powder.
    2. While the vegetables are cooking combine the coconut, jeera, green chillies, and cashew nuts. Add a
      little water and grind it well (preferably in a food processor).
    3. When the vegetables are soft (not too soft) enough add the paste(from step 2) to the mixture and let it
      cook over a medium flame for about 5 minutes.
    4. Turn off the stove and beat the mixture well while adding yoghurt. Mix well.
    5. Put the kadai on the stove and pour the coconut oil.
    6. Add the pepper. Let it pop and then add curry leaves. Add this to the avial. Serve with rice or chappathi. Enjoy!
