- Ingredients:-
- Vegetables - carrots, beans, green plantain, drumstick, chow-chow, peas (2 cups altogether)
- Coconut - 1 cup
- Jeera - 1tsp
- Green chillies - 6-7
- Cashew nuts - 2 tbls
- Turmeric Powder ½ tsp
- Dhania powder ¼ tsp
- Yoghurt ½ cup
- Salt to taste
- Curry leaves
- Cocnut oil 2 tsp
- Pepper ½ tspy
- Preparation:-
- Cook all the vegetables 1 cup of water with little
salt, turmeric and Dhania powder.
- While the vegetables are cooking combine the
coconut, jeera, green chillies, and cashew nuts. Add a
little water and grind it well (preferably in a food
processor).
- When the vegetables are soft (not too soft) enough
add the paste(from step 2) to the mixture and let it
cook over a medium flame for about 5 minutes.
- Turn off the stove and beat the mixture well while
adding yoghurt. Mix well.
- Put the kadai on the stove and pour the coconut
oil.
- Add the pepper. Let it pop and then add curry
leaves. Add this to the avial.
Serve with rice or chappathi. Enjoy!
